Preparation:
Clean, wash and rinse the grouper. Put the oil in a large and shallow pan and fry the chopped parsley and garlic briefly. Then add the tomatoes sliced into pieces. Salt it, pepper it and put it to cook.
Add the grouper and more water to make sure it is coating the fish. Continue cooking it on a very moderate heat, without stirring, for about one hour.

•   1 kg of grouper
•   300 g of tomatoes
•   1 dl of oil
•   4 slices of garlic
•   few parsley’s leaves
•   salt, pepper
